Our Mexican chocolate from the Chiapas region is packed with flavour and punch like most things Mexican. This particular bar with the milky notes is backed up with a fantastic roasted cashew note that distinguishes it from the rest of our bars.

Our cacao beans from Soconusco could be described as a mixture of criollos and trinitarios (“trinitarios acriollados” as they call them), the beans when fresh are predominantly white and pink and the shape of the pods have the typical shape of Mexican heirloom varieties: corrugated skin and the typical "lizard" tail.
The roasted and deshelled beans display a wide range of colors and the resulting chocolate has very light tones, almost like milk chocolate.
This bean has a very chocolatey and nutty flavor upfront, the latter specifically like cashew and peanut butter. Fruit is present in the form of subtle date and raisin notes, whereas astringency and acidity are almost nowhere to be found, which in turn heightens the impression of a natural sweetness. There are also some light woody and citrus notes that definitely take a backseat compared to the other flavors. It is a very flexible bean withstanding very different roasting profiles as long as they are not too high, which could turn the nut component bitter. This bean is espeacially suitable for top-notch "dark" milk chocolates.

We currently use PBT Couriers for orders in New Zealand, with prices ranging from $3 to $7.50 (more for rural)
Please note that deliveries to the Outer Islands (Chatham Island, Stewart Island, Kawau Island, Waiheke Island, Matakana Island, Great Barrier Island and d'Urville Island) will incur additional costs. Unfortunately, we are unable to deliver to P.O. Boxes.
We aim for overnight delivery on North Island orders apart from orders received Friday after 12 till Monday, These orders will go out on Tuesday, and a two day service for the South Island (from the time of dispatch), though occasionally it can take two or three days longer than this. Please let us know if your delivery is urgent and we'll see what we can do. If you order before 9am we will get your order out the same day, otherwise it will be sent on the next working day.
Orders are always well packed with plenty of insulation and to date we have had no problems with melting in the post (touch wood!) We instruct our couriers to leave parcels in a cool and shaded spot if nobody is home - please make sure you have a suitable and shaded spot for orders to be left. If you have any special instructions for where the courier can leave your order, please write this in the 'special instructions' section on the shopping cart page.
Please not that we cannot send single orders to multiple addresses. You will need to make one order per address.
We currently offer international delivery to Australia, North America, Europe and Asia.
As chocolate is such a temperature sensitive product, we cannot take responsibility for any melting that occurs in transit for international orders. We do however take the upmost care with packaging and insulation, as we know the pain of receiving melted chocolate all too well.
Also, we cannot take responsibility for any duties or taxes that customs may decide to charge on arrival of international orders. This does not usually apply but if you are ordering a large amount you may want to double check your county's rules and regulations on this matter.
